Rack Oven is designed for baking all kind pastries, cakes, and yeast breads utilizing completely Indirect Gas Fired System. Steam system is optional according to customer order. If the customer wants to have bread production possibility in addition to pastries, the oven should be equipped with steam system.
This oven uses Indirect Gas Fired System (IGF) to provide baking heat. The oven is equipped with a high quality heat exchanger which results in maximum efficiency and low fuel consumption. In this oven a centrifugal fan circulates the heat inside the baking cabin, so the customers will have uniform baked products.
In this system, all control operations are performed by a PLC system which has been placed in electrical enclosure. The operator can set the options via HMI (Human Machine Interface) touch screen such as steam time, oven temperature, adjusting time duration that the burner is On after fan operation, automatic ON & OFF time and baking timer or select default program for all kinds of products.
Temperature curve display, data storage, USB port for data transfer, connecting machine to computer systems, remote control, IoT connectivity and other options are possible according to customer requirements.
